| Organic Light Rye Loaf |

Ingredients 2 cups water 25g instant dried yeast 100mL organic rapadura sugar 1 tsp caraway seeds, crushed 2 organic eggs, beaten 2 cups organic rye flour 4 cups organic plain flour Method Pour half a cup of the warm water into a small bowl, add the dry yeast and stir gently with a teaspoon, trying to dissolve the yeast a little. Cover and let stand in a warm place for 5-10 minutes. When it is frothy, the yeast is at the right temperature and ready to use. In a large bowl, mix together the rest of the water (which should be the same temperature as the first amount of water) and the yeast mixture, then add the sugar, seeds and pre-beaten eggs. Mix together the organic rye flour and the organic plain flour, then add 4 cups of the flour to the wet mixture. Stir until all the flour is well mixed-in and resembles a dough. Add the last bit of flour a little at the time, until the dough turns into a ball and comes off the sides of the bowl. Cover and stand in a warm place for about 30 minutes until it has risen to almost double its size. Turn the dough onto a bench and knead with flour for a few minutes. Divide into 2 pieces, and roll each one into a loaf. Put into lined loaf tins or put them on a lined baking tray. Cover and let rise in a warm place until doubled in size.
