| Almond, Fennel and Orange Salad |

An easy, healthy and nutritious salad! Ingredients ![]() ½ cup raw whole almonds 2 tablespoons white balsamic vinegar 4 tablespoons olive oil 1 teaspoon Dijon mustard 1 cup of flat leaf parsley 2 fennel bulbs, sliced extra thinly 2 sweet oranges, peeled and segmented Salt and pepper to taste Method To make dressing place vinegar, oil and mustard in a mixing jar and shake to combine. Toss fennel, orange segments, parsley and almonds in a large mixing bowl. Drizzle dressing over combined ingredients and add salt and pepper to taste. Serve immediately.
