Sugar free, gluten free and just full of yumminess! You can enjoy this as a dessert or breakfast...it's addictive! Ingredients ![]() 1 cup raw cashews ½ cup chia seeds 6-7 medjool dates (remove seeds or used diced dates) 1 vanilla bean, split and seeds removed 4tsp vanilla extract (1tsp extract is equiv to 1 fresh vanilla pod) ½ tsp ground cinnamon Pinch of salt 4 cups of water Fresh berries or fruit to serve Method Soak the cashews in water for up to 2 hours, then drain and rinse. Place the chia seeds in a separate bowl with the outer vanilla pod. Place the cashews in the blender, blitz them! Add the dates, vanilla seeds and extract, cinnamon, salt and water to the blender, combine well. Add the blended liquid to the chia seeds and whisk together. Allow the chia mixture to sit for 15 minutes, whisking every 3 minutes. Place mixture in the refrigerator for at least 1 hour to set. Remove and whisk once more.
