Gluten Free Millet Mango Fruit Cake

Ingredients

425g of canned mango slices in natural juice (or fresh if in season!)
500g of good pud fruit mix (or mixed dried fruit)
½ cup of organic dried ginger - chopped
½ cup of water
2 lightly beaten eggs
1 teaspoon of mixed spice
1-1/2 cups of organic millet flour
1 -1/2 teaspoons of Bicarb Soda

Method

Combine the Good Pud or mixed fruit, ginger, undrained mango, and water in a large pan and bring to the boil and simmer for one minute, Cool.
Once cool, sift Bicarb Soda, organic millet flour, and mixed spice and add to the cooled fruit mix and then mix in the eggs.

Cook in a fan forced oven for approximately 1 hour at 145-150c.

Use organic ingredients where possible.
