Zucchini Muffins

Melissa's Zucchini Muffins

Ingredients
600g zucchini (approx 6 zucchinis)
3 brown onions
9 rashers short bacon
2 cups grated cheddar cheese or parmesan
2 cups self-raising flour
1cup grapeseed or olive oil
8 eggs, lightly beaten
Salt & pepper

Method
Sieve flour into a separate bowl.
In a Magimix chop unpeeled zucchinis, onions & bacon.
In the bowl mix zucchini, onion & bacon with sifted flour, cheese, grapeseed/olive oil and lightly beaten eggs.
Season with salt and pepper.
Pour into muffin cases/wraps and bake in moderate oven 30-40 mins or until browned.
Makes 24 muffins.
