| Organic Apple & Carrot Muffins - makes 15 large or 30 small muffins |
Ingredients
½ cup Organic Wholemeal flour Method Preheat oven to 180°C. Mix together flours, sugar, baking soda, cinnamon and salt. In a separate bowl, whisk together the eggs, oil and vanilla. Add this to the flour mixture & stir through until combined. Add the remaining ingredients and mix through gently. Spoon the batter into your muffin tray, filling each about 3/4 full. Sprinkle a little organic desiccated coconut over the top or each and bake for 20 to 30 minutes, or until cooked through. (15 -20 minutes for the little muffins or 20 – 30mins for the large muffins) |
