Organic Chickpea & Lentil Salad |

Ingredients 1 cup organic chickpeas 1 cup organic green lentils ½ cup organic cous cous 1-2 tomatoes, chopped 3-4 shallots, chopped Handful parsley, chopped Salt, black peppar to taste
Method Cook chickpeas, lentils and cous cous according to instructions on packets. When cooled, mix with chopped tomatoes, shallots and parsley. Season to taste with salt and peppar. Lasts in the fridge in a sealed container for days. Enjoy with a summer BBQ or as a delicious lunch on its own!
Serves 6-8
