Organic Waldorf Style Superfood Salad |

Salad Ingredients 2 cups Kale - finely chopped 1 red apple – finely chopped 1 cup celery – thinly sliced1/4 cup Organic Walnuts, lightly toasted & chopped 2 tbls Organic Dried Incaberries
Dressing Ingredients 1 tsp Organic Chia 1 tsp Organic Super Manuka Honey ¼ cup Organic Walnuts, lightly toasted & chopped (in addition to the ones in the salad) ½ tsp Dijon Mustard 6 tbls water (+ more if required) 2 tbls rice wine vinegar Small sprinkling of salt & pepper
To make the dressing, place walnuts & chia in the food processer or Thermomix and grind until you have a fairly consistent meal or powder. Add the remaining dressing ingredients and blend until well combined. Add more water if required to enable the dressing spread well over the salad. Combine the salad ingredients in a bowl and add the dressing before serving & toss well to combine.
