Kernels of medium grain brown rice from which only the hull has been removed. Cooked brown rice has a slightly chewy texture and a nut-like flavour. The light brown colour of brown rice is due to the presence of bran layers. These layers are rich in minerals and vitamins, especially the B-complex group. Medium Grain rice is rice whose grain is less than three times as long as it is wide. Medium grain rice is sometimes labelled "Short Grain," simply to distinguish it from Long Grain.
