This Manuka Honey has methylglyoxal concentration of 30+ mg/kg.

Methylglyoxal is a naturally occurring compound that was identified in 2006 as the dominant anti-bacterial constituent of Manuka honey. Before the identity of the active compound was known, the potency was measured as UMF or "Unique Manuka Factor" ratings. Studies at the Technical University of Dresden in Germany and at the University of Waikato in New Zealand, have proven that UMF values are directly related to methylglyoxal content. Levels in Manuka honey range from 0 to more than 700mg/kg - Charles Dragar PhD.

Teatree (Leptospermum scoparium) is a shrub which occurs along the south east coast of Australia, in Tasmania and in New Zealand, where it is called Manuka. Only honey collected from certain Leptospermum plants contain the special UMF property. The UMF activity exists in addition to the hydrogen peroxide antibacterial activity found in all honeys.  This activity is due to an enzyme which is added to the nectar by the honeybee & these two antibacterial activities work together to enhance each others effects, creating this unique natural product.

This Manuka Honey was Awarded a Gold Medal by the Royal Agricultural Society of Tasmania at the Royal Hobart Fine Food Awards in 2009.

If your honey develops a candied, sugary appearance during the colder weather, simply place the jar (with its lid on loosely) in a pan of warm water until it softens & re-liquefies. Do not heat it above 40 deg C & minimise the honey's exposure to heat & light as much as possible in order to retain all of its natural goodness.
