This beautiful Stringybark honey is from Tasmania. The cold extraction process means it is only heated to temperatures below 45 Deg C & so it retains all of it's nutritional value.
If your honey develops a candied, sugary appearance during the colder weather, simply place the jar (with its lid on loosely) in a pan of warm water until it softens & re-liquifies. Do not heat it above 40 deg C & minimise the honey's exposure to heat & light as much as possible in order to retain all of its natural goodness.
