Organic wholewheat couscous is a partially cooked grain made from whole wheat. It is made from whole grain durum flour making it more nutritious than couscous made from white flour. The Berbers of North Africa first produced couscous in ancient times. Made from semolina grains couscous is incredibly versatile and easily prepared. It is a healthy, quick and easy side to serve with meat, chicken, seafood or vegetables. Couscous is also great in salads and stuffing's and can be served hot or cold, flavoured or plain. Try cooking couscous with stock rather than water for added flavour. Place 1 cup couscous into a heatproof bowl, add 2 tsp virgin olive oil and 3/4 cup hot vegetable stock (or water). Cover and leave for 4 mins. Fluff up couscous grains with a fork, season and serve. For variety you an also add any of the following before adding chicken stock, grated lemon zest or finely chopped preserved lemon, a pinch of cinnamon, chopped dried apricots, sultanas and pine nuts, or shredded fresh mint.
