1 tablespoon extra virgin olive oil
1 small onion, finely chopped
1 cup jasmine rice, washed and drained
4 sprigs thyme
1 stick cinnamon
1/3 cup blanched almonds, toasted
4 tablespoon organic raisins
2 tablespoons lemon juice
1 lemon zested
- Heat the oil in a pan and gently sauté the onion for 2 minutes.
- Add the rice, thyme, cinnamon stick and water and bring to the boil.
- Cover the pan, reduce the heat and cook for 20 minutes or until the rice is completely cooked through.
- Remove the cinnamon stick and stir through the almonds, raisins, lemon juice and zest.
