1/2 cup organic raw whole almonds
2 tablespoons organic white balsamic vinegar
4 tablespoons organic olive oil
1 teaspoon dijon mustard
1 cup of flat leaf parsley
2 organic fennel bulbs, sliced extra thinly
2 organic sweet oranges, peeled and segmented
salt and pepper to taste
- 1. To make dressing place vinegar, oil and mustard in a mixing jar and shake to combine.
- 2. Toss fennel, orange segments, parsley and almonds in a large mixing bowl.
- 3. Drizzle dressing over combined ingredients and add salt and pepper to taste.
- 4. Serve immediately.
