1 1/4 cup almond meal
1 cauliflower, cut into florets
3/4 cup Parmesan cheese
2 free range eggs, beaten
- Preheat oven to 200C. Whiz up the cauliflower in a food processor until it resembles fine crumbs. In a bowl combine cauliflower, almond meal, parmesan, eggs, salt and pepper.
- Line a pizza tray with baking paper. Put enough mixture to just line the pizza tray, shaping it into a pizza base. I like to keep my base nice and thin but feel free to make yours whatever thickness you prefer.
- Bake in the oven for 20 minutes or until they are a medium gold colour and firm.
- Remove pizza from oven and add toppings and bake for a further 10 minutes or until cooked.
