Organic wholewheat couscous is often served as a side dish with meat, chicken, seafood or vegetables. Couscous is also great in salads and stuffing and can be served hot or cold, flavoured or plain. Try cooking couscous with stock rather than water for added flavour.
To cook: Place 1 cup of couscous into a heatproof bowl, add 2 tsp virgin olive oil and 3/4 cup hot vegetable stock (or water). Cover and leave for 4 mins. Fluff up couscous grains with a fork, season and serve.
For variety you can also add any of the following before adding chicken stock, grated lemon zest or finely chopped preserved lemon, a pinch of cinnamon, chopped dried apricots, sultanas and pine nuts, or shredded fresh mint.
