Organic Millet Flour is commonly used for flat bread, tortillas and corn chips. Substitute 1/4 millet flour for an equal amount of wheat flour in your recipe. Millet flour is often mixed with gluten-rich flours to make yeast raised bread and cakes. For added nutrition, replace up to 25% of wheat flour with millet flour. Millet flour can also be used as a thickening or binding agent in place of cornflour. Millet flour produces a delightful, light crumbly texture to baked goods. Ideally Millet flour should be stored in an airtight container in the refrigerator to retain its freshness

Organic Millet is a grain from the grass family which looks very much like wheat but is naturally gluten free. Organic millet flour is produced by stone grinding the hulled millet grain into a fine flour. No further refinement or processing occurs and there are no other additives.
