PRODUCT INFORMATION

Ingredients

1x 400g tin organic chickpeas 
1/3 of a red onion, thinly sliced
1 clove garlic, diced
1 tsp organic maple syrup
Handful baby spinach
1-2 pieces of sourdough bread
1/4 cup hummus
Handful of cherry tomatoes 
1/2 of a lemon

Spice Mix:
1 tsp smoked paprika
½ tsp organic cinnamon
½ tsp organic cumin
Pinch of Celtic sea salt
Pinch of organic chilli flakes (optional)

method

  1. Drain chickpeas and rinse thoroughly. Set aside.
  2. Put oil in a frying pan with diced onion, garlic and chilli flakes, and cook over low-medium heat. Once the onions turn translucent, add chickpeas, maple and spices. Stir thoroughly until chickpeas are coated in spices.
  3. Cook for a further 5 minutes then add a handful of spinach and continue to cook until wilted down. Remove from heat.
  4. Toast Sour Dough and add a generous layer of hummus. Pile Chickpeas and spinach on top and serve with cherry tomatoes and lemon.
