Khorasan (also known as Kamut) is an ancient grain that has been re-discovered in recent years. It is more easily digested and assimilated than regular wheat grain so, much like spelt, some people with wheat sensitivities can tolerate it, however, it does still contain gluten. It is higher in protein than wheat grain, contains zinc, magnesium, B vitamins, Vitamin E, protein, amino acids and essential fatty acids. Khorasan flour has a buttery-rich nutty flavour and smooth texture.

The high protein content in kamut helpss to produce breads with excellent volume and texture. You can substitute Khorasan flour in any recipe that requires flour. More water is required when making bread.

Organic Unbleached White Khorasan Flour is produced by milling the whole khorasan grain into fine powder and removing the bran to produce a beautiful light golden colour and textured flour.

I love Kamut flour as it's the only cheat in my otherwise gluten free diet!
I find I can happily make pasta from it and not suffer the side effects that regular pasta gives me.

Give it a try, a non hybridized grain, the way wheat was meant to be!
