This recipe is an adaptation of one of my Aunts recipes that I absolutely love. I have a little hand stick blender that I just wizz all of this up in. It takes 5 minutes to make and tastes absolutely delicious. You are looking for a nice textured, not too wet mixture that would stay together if you rolled it into a ball.

PRODUCT INFORMATION

Ingredients

1 + 1/2 cups organic raw mixed nuts
1 long red chilli
1/2 red capsicum
1/2 cup cheese
1/2 onion, chopped
zest of 1 small lemon
1 tsp grated ginger
handful of parsley
1 free range egg
2 avocados

method

  1. Preheat oven to 180C.
  2. In a blender add nuts, chilli, capsicum, cheese, lemon zest, ginger, parsley, onion and egg and a good pinch of salt and pepper.
  3. Remove pit from avocados. Stuff avocados with nut mixture.
  4. Bake in oven for 10 mins or until mixture is golden.
