3 cups of watermelon, chopped and seeds removed
1/3 cup water
The juice of 1 fresh lime
1/2 cup fresh chopped mint
2 tbsp organic brown rice malt syrup
- Place in easy reach on the bench top - ice 12 block moulds with a capacity of 1/4 cup each (or equivalent planning for 3 cups of ice block mix).
- Put all the iceblock ingredients into a blender or food processor, and blend for as short an amount of time as you can until it’s smooth and juicy, and the mint is finely chopped.
- (If you blend for too long, the friction from the spinning blades may heat the juice, which is not preferable.)
- Making sure that the mix is consistent (e.g. mint is distributed throughout), pour into ice block moulds then place into the freezer.
- Once frozen - enjoy!
