All Demeter Farm products are 100% stoneground using imported European millstones. This very ancient method of stone milling grains gently reduces the whole grain to a fine meal which retains all the natural goodness of the grain.

Stoneground vs Roller Milled flour?
Stone milling is done at a very slow rate, with minimal heat, only extracting the required bran from the flour. This method retains the germ, bran and endosperm of the original wholegrain.
The regular roller milled flours extract all the segments of the grain, then add back what is required to achieve the paticular flour, with other segments of the flour sold separately. Only 78% of the wheat grain ends up in the finished product with roller milled flour.

Stone milling preserves all of the grains natural nutrients and ensures they're evenly distributed throughout the flour. The vitamin rich wheat germ oil is then released into the flour, giving it the distinctive colour and flavour.
