What is Vinegar?
The word “vinegar” comes from the Old French vin aigre, meaning “sour wine” — and that’s exactly where it all begins. Vinegar is created through natural fermentation: microorganisms convert sugars into alcohol, and then beneficial bacteria transform that alcohol into acetic acid. How Vinegar is Made?
The production of vinegar happens in two main stages:
- Alcoholic fermentation: Yeasts convert sugars from fruits or grains into alcohol.
- Acetic fermentation: Acetic acid-bacteria then transform that alcohol into acetic acid, giving vinegar its characteristic tang.

Ageing, Tradition and Place
In the case of a true Balsamic Vinegar of Modena IGP, the process begins with cooked grape must, slow acetic fermentation and prolonged ageing in a succession of small wooden barrels, with each barrel often made from different woods (mulberry, cherry, juniper, chestnut).
What’s remarkable is the way the ageing environment influences the final flavour: in Modena, producers utilise seasonal temperature differences - summer warmth encourages evaporation and concentration of flavour, winter cool allows mellowing and maturation.
