- Thoroughly rinse the legumes in cold water.
- Add legumes to a pot and cover with hot water and leave to soak for the required time. Drain and rinse again.
- Place the now-soaked legumes in a clean pot and cover with plenty of fresh water.
- Bring to boil then reduce the heat, cover and simmer for the suggested cooking time, or until the beans or lentils are tender and soft, but not mushy.
- Drain and rinse the cooked legumes until the water runs clear.
