½ cup organic rolled oats
½ tbsp organic black chia seeds
1/4 tbsp organic psyllium husks
1 ½ cup organic soy milk
1-2 organic medjool dates, pitted and cut into cubes
4 fresh strawberries, cut into cubes
1/4 tbsp organic pepitas
- Place oats, chia and psyllium in a glass jar (preferably one with a screw top cover, like a mason jar). Add soy milk and stir contents to mix.
- Add medjool dates, strawberries and banana (or your choice of fresh and dried fruit).
- Sprinkle the top with pepitas.
- Tighten jar with lid and place overnight in the fridge.
- Top with additional fresh fruit and serve.
