PRODUCT INFORMATION

Ingredients

Base
1 cup organic almonds
1 cup organic currants
½ cup organic desiccated coconut
4 tbsp organic coconut oil, melted
Pinch Himalayan sea salt

Filling
1½ cups organic cashews, soaked for 1 hour
½ cup organic cacao powder
2 tbsp organic cacao butter, melted
¼ cup organic coconut oil, melted
2/3 cup organic brown rice syrup OR
2/3 cup organic maple syrup
1 tsp vanilla extract
Pinch Himalayan sea salt

Topping
½ cup organic goji berries
toasted organic coconut flakes

method

Base:

  1. Blitz all ingredients in a food processor until crumbly.
  2. Press evenly into a lined 8 inch spring-form cake tin and chill in the fridge while you make the filling.

Cheeseake Filling:

  1. Blend all filling ingredients in a food processor or high-power blender until nice and smooth. Scrape the sides as you go to make sure it is evenly blended.
  2. Pour into the prepared base and use a spatula to even the surface on top.
  3. Place in the freezer for 2-3 hours until set.
  4. Move the cake to the fridge 30 minutes before serving.
  5. To serve, decorate with organic goji berries or your desired toppings! (Toasted coconut flakes would be great!)
