1 cup organic medjool dates, pitted, soaked & drained
1 cup organic oven roasted cashews
2-3 serves vanilla bean protein powder
3 tablespoons organic coconut oil
2 tablespoons organic maple
2 tablespoons cashew butter
1 tablespoon organic lucuma powder
1 teaspoon Himalayan salt
Add all ingredients in a food processor and blend until combined. You can add some of the water used to soak the dates to create a smoother consistency.
Roll the mixture into bite sized balls and place them on a tray or in a bowl. Refrigerate until set.
Store in an airtight container in the fridge for 2-3 weeks.
