Traditional Slovakian Walnut Slice Cake with Egg Yolk Glaze

1. Preheat the oven to 180°C (350°F) and line a 40x30cm baking tray with parchment paper.

2. In a large mixing bowl, cream together the softened butter and icing sugar until light and fluffy.

3. Stir in the ground walnuts until fully combined.

4. In a separate bowl, beat the egg whites using an electric mixer until stiff peaks form.

5. Gently fold the beaten egg whites into the walnut mixture until well incorporated.

6. Pour the cake batter into the prepared baking tray, spreading it evenly.

7. Bake for approximately 30 minutes, or until a toothpick or skewer inserted into the centre comes out clean.

8. While the cake is baking, prepare the glaze by whisking together the egg yolks and sifted icing sugar until smooth.

9. Once the cake is baked and still hot, pour the egg yolk glaze over the cake, spreading it evenly and quickly as it dries out fast.

10. Allow the cake to cool completely before slicing.

Tip: Use a serrated knife to cut the cake, as the glaze can crack easily under pressure.
