- Add mousse ingredients to a food processor or high-powered blender, blend until smooth and creamy. Transfer to a separate bowl.
- Scoop the solid top layer of coconut cream out of the tin and place in blender or food processor. Add the salt, icing sugar and vanilla, and blend until whipped.
- Layer mousse and cream into cups or jars. Top with your favourite toppings, for example, mint leaves, cacao nibs or fresh berries. Enjoy!
