Once collected into clay pots, the sweet sap is then heated and evaporated to form this concentrated coconut syrup. Coconut syrup is a more concentrated sweetener compared to coconut nectar, evaporated from 4L of sap to make just 1L of coconut syrup. Coconut nectar on the other hand is evaporated from 1L of sap to make 800ml and has a lighter and slightly sweeter taste.

Coconut syrup is made from 100% pure organic coconut sap. It is produced by taking 4L of the coconut sap and boiling it to produce 1L of syrup. The sap is heated to 75-80 degrees to prevent fermentation, and to evaporate the water content in the coconut sap. Coconut syrup contains 72-75% sugar and is a dark mahogany brown colour. 

The colour, sweetness and flavour of the coconut syrup can vary slightly depending on the coconut species used, season and location of harvest and  the way the sap is reduced during production. An example of this is when there is a slight decrease in the percentage of dissolved solids present in the sap over the rainy season.
