| Organic Beans - Mexican Style |

This simple organic bean recipe can be used for a variety of different serving suggestions. It can be used for beans in nachos, burritos or wraps or simply eaten as is or on toast. Ingredients 1 clove of garlic 2 tsp olive oil1 small onion (finely diced) Organic beans are more digestible if pre-soaked for 6-8 hours or overnight. Add organic beans to saucepan and cover with water. Be sure to remove any stones that are sometimes found in organic beans or pulses - no amount of soaking will soften these up! If you have soaked the organic beans, drain well & discard the water. Add 6 cups of fresh water to saucepan. Simmer the organic beans over gentle heat for 1 hour stirring occasionally and ensure the water does not run low. Meanwhile in a separate saucepan add garlic, onion and oil and cook for 2-3 minutes then add the spices and stir them through. Add this mixture to the organic beans after the beans have cooked for 1 hour, then add the carrot, capsicum and chilli and stir through well. Finally add the tinned tomatoes and partially cover with the lid and continue to simmer over low heat for 30 - 45 mins or until the mixture has thickened up.
