Holly Davis

Holly Davis is a wholefood chef, teacher and one of the co-founders of Sydney’s Iku Wholefoods. She began her fermentation journey as a teenager, using her mum’s linen cupboard and any spare bench she could, to house delicious fermenting pickles, cheeses and drinks. She has been making these foods and teaching others how to for over 40 years.

Holly is very generous in sharing her knowledge, SCOBYs and starters with the curious. Her cooking classes are to educate and inspire people to eat in accordance with their needs and the seasons. She continues to run workshops, classes and retreats, is a food coach with individuals looking to make dietary changes and has her own organic wholefood catering business.

She respects the traditions that help to maximise nutrient values and digestibility of the dishes made. Lacto-fermentation is an art she adores, practices and loves to teach. She believes that cooking is an alchemic art form, not an exact science.

She kindly shares some delicious, wholesome recipes with us and has been a supporter of Honest to Goodness for many years.
