Banana Bread Porridge with Caramelised Bananas

PRODUCT INFORMATION

Ingredients

Porridge:

½ cup organic rolled oats
1 cup organic almond milk
1 small very ripe banana (mashed)
Celtic sea salt
½ tsp organic cinnamon powder
1 tsp vanilla extract
½ tsp organic maca powder

Caramelised Bananas:

Organic butter/ organic coconut oil (virgin)
½ ripe banana, halved again lengthways
½ tsp organic cinnamon powder
1 tsp organic raw honey

1 tbsp organic peanut butter, to serve

method

  1. Place the oats in a small saucepan with the almond milk, mashed banana, sea salt, cinnamon and vanilla. Heat over medium-high heat until boiling. Reduce heat and simmer uncovered for 5-10 minutes or until almost all liquid is absorbed.
  2. Meanwhile, melt the butter or coconut oil in a small saucepan/frypan over medium-low heat. Sprinkle one side of the banana slices with half of the cinnamon and drizzle over half of the honey and then place that side down in the pan. Cook for 3-5 minutes or until caramelised. Sprinkle the other side with cinnamon and honey and then flip them over to cook for another 3-5 minutes.
  3. Stir the maca powder into the oats (you could also add a ½ scoop of vanilla protein at this point). Once the oats have reached your desired consistency (you can add more milk), serve them in a bowl and swirl through the peanut butter. Top with the caramelised banana, a drizzle of honey and some extra cinnamon. Enjoy!

Quality
We made this recipe today and found it delicious. We substituted the oats with quinoa flakes to make it gluten free and used almond milk. It only took 20 min to make. We highly recommend you give it a try. (Posted on 15/05/2018)
