This Organic Unbleached White Cake Flour is a soft wheat flour with a creamy colour and less protein and gluten than plain flour so it produces a finer, more crumbly texture to baked goods. This flour is made by milling the whole soft wheat grain and sieving off the bran.
Ideal for baking delicate white cakes, biscuits and pastries where a tender and delicate texture is desired. Contains approximately 8-9% protein.

It is a light flour best suited for making delicate cakes, biscuits and pastries. Must be refrigerated or frozen to retain freshness. To substitute cake flour for general bakers flour use 1 cup plus 2 tablespoons of cake flour for every cup of bakers flour.
This Organic Unbleached White Cake Flour is produced by mainly from Rosella wheat which is a variety of soft wheat. It is produced by milling the whole wheat grain and sieving off of the bran. Unlike most commercially available white flours, there is no bleaching, no further refinements and no additives. While much of the dietary fibre is lost by removing the bran, it retains a substantial proportion of wheats nutrients.
