1 cup organic (cooked) quinoa
1 cup zucchini, grated and squeezed/drained
1 cup roasted vegetable pieces
1 tsp thyme (or add any other herb you like) Salt & Pepper to taste
Small handful of your favourite cheese
1/4 cup organic almond meal
1 heaped tsp natural baking powder
Organic coconut oil (for frying)
- Mix it all ingredients together and form into patties. (You may need a little more almond meal depending how moist the mix is)
- Cook in coconut oil for about 3 mins each side, until golden.
- Serve with a delicious fresh salad!
