DESCRIPTION
Prepare the Dates: If you haven’t done so already, soak the pitted dates in warm water for about 10 minutes to soften them, then drain.
Blend the Mixture: In a food processor, combine the softened dates, almond butter (or peanut butter), honey, and salt (if using). Blend until smooth and well combined.
Add Dry Ingredients: Add the rolled oats, mixed nuts, and wattleseed (if using) to the food processor. Pulse until everything is combined but still has some texture. You may need to scrape down the sides to ensure everything is mixed evenly.
Press into a Pan: Line a square baking dish (approximately 8x8 inches) with parchment paper. Transfer the mixture into the dish and press it down firmly with your hands or a spatula to create an even layer.
Chill and Set: Place the dish in the refrigerator for at least 1-2 hours to set.
Optional Chocolate Topping: If using, melt the dark chocolate in a microwave or using a double boiler. Once melted, pour it over the set slice and spread it evenly. Return to the refrigerator to set.
Cut and Serve: Once set, lift the slice out of the pan using the parchment paper and cut it into squares or bars. Store in a sealable container in the refrigerator for up to 1 week.

1 cup Pitted Dates (soaked in warm water for 10 minutes, then drained)
1 cup Mixed Nuts (almonds and cashews)
1 cup Rolled Oats
1/4 cup Honey (omit for children under 1 year)
Pinch of salt (optional, omit for children)
Optional: melted dark chocolate for topping
Optional: 1-2 tablespoons wattleseed (omit if unavailable)
