Healthy Oat Pancakes

Method
- Mix oats, cinnamon, chia seeds, ricotta and egg into a bowl.
- Using 1/3 of the vanilla bean, cut the pod lengthwise, scrape out the small black seeds, and mix them into the batter.
- Heat up coconut butter or ghee in a pan.
- Scoop 2 tbsp of mixture onto pan and cook for around 1-2 minutes on each side.
- Top with honey and toppings of choice.
