2 cups frozen raspberries
Zest and juice of 1 lime
1/2 cup organic cashews, soaked and rinsed
2 tablespoons organic coconut oil
2 cups organic coconut milk
2 tablespoons organic coconut syrup
Fresh raspberries to serve
Shredded coconut to serve, optional
- Pop the raspberries, lime zest (reserving a little for your garnish), lime juice, cashews, coconut oil, coconut milk and coconut nector into your blender & process for about 60 seconds.
- Check the consistency, and add water if you want it a bit thinner.
- Pour into glasses (or bowls) and top with fresh berries, shredded coconut and the reserved lime zest. It looks super pretty!
