Pop the raspberries, lime zest (reserving a little for your garnish), lime juice, cashews, coconut oil, coconut milk and coconut nector into your blender & process for about 60 seconds.
Check the consistency, and add water if you want it a bit thinner.
Pour into glasses (or bowls) and top with fresh berries, shredded coconut and the reserved lime zest. It looks super pretty!
