Organic Spelt Grain is an ancient cereal grain which has a delicious nutty flavour. Organic spelt grain is highly nutritious, being naturally high in fibre and protein. It is similar to wheat in appearance, but has a tougher husk than wheat which may help to retain nutrients in spelt. 

Spelt grain contains more protein than wheat, and the protein in spelt is easier to digest so wheat-intolerant individuals prefer this.

Spelt grain can be substituted for wheat grain. It is suitable for home milling, pilafs and salads. You could also try rolling it so it can be used as porridge.

Spelt grain can be cooked in a fast boil similar to brown rice - boil for 55 to 60 mins until tender. Or soak overnight for a quicker cook; or for using in pilaf or risotto. 

Organically grown, spelt is processed similarly to wheat grain which involves cutting the heads from the top of the spelt plants and then thresh them to remove the grains from the rest of the head, called chaff. The grains are divided from additional plant fragments, cleaned and separation of bran, endosperm and germ can take place. Unlike wheat, where vital nutritional bran and germ are quite often removed, the vital substances of spelt are in the inner kernel of the grain so it is never lost. It is grown without the use of insecticides or pesticides and harvested and packed without the use of preservatives and additives.

I use this Organic Spelt Grain for home milling for homemade bread. The colour of the bread is so impressive, this is what real whole grain bread looks like, dark and no doubt nutritious. I have trouble with normal organic whole wheat as my skin breaks out with a psoriasis rash, but this spelt grain is okay ... interesting. Received my spelt seeds but was disappointed that I can't used them to make my own green wheat juice with them.
I did usk the lady over the phone but her respond was "you have to try and see". Fair enough,
but would be nicer if they try little bit harder to find out if seeds can be planted again.
I guess I have to use it just in cooking and baking.

I have been very pleased with the quality of spelt grain I've purchased from HTG over the last year.
