2 cups organic brazil nuts (390g)
6 medjool dates – seeds removed (120g)
1 cup organic peanut butter (340g)
½ cup organic desiccated coconut (45g)
3 tbsp organic maple syrup (40g)
1 heaped tsp organic coconut oil (solid)
good pinch salt
- In a large food processor place the brazil nuts and dates and blitz on a medium – high speed until combined. (Thermomix: Speed 7 / 10 seconds)
- Add the rest of the ingredients to the brazil nut mixture and blitz again on medium – high speed until a sticky paste is formed (you might need to scrape the sides down a few times during this process).
- (Thermomix: Speed 5 / 30 seconds. Scrape down sides and repeat this speed and time 2-3 times. )
- Roll mixture into heaped tablespoon size balls. Makes approximately 40. Store in an airtight container in the fridge.
NOTES: You can swap brazil nuts for other nuts of choice. Almonds or Macadamias would be my next choice.
