Peanut Butter & Hemp Seed Breakfast Granola

This breakfast granola is not only high in fibre and low GI (low-glycemic index), but it also tastes amazing and fills you up! It's rich in omega-3, thanks to the hemp seeds, and has a hint of sweetness from honey. Let's not forget about the plant points! Each portion provides 6 plant points, making it a great way to add more plant-based diversity to your diet. Method

Preheat your oven to 180 degrees Celsius (356°F).

In a medium-sized mixing bowl, combine the extra virgin olive oil, honey, tahini, and smooth peanut butter. Whisk these ingredients together until they are well combined.

In a separate, larger bowl, add the rolled oats, hemp seeds, and chopped almonds. Stir these dry ingredients together until they are evenly mixed.

Pour the wet ingredient mixture into the bowl with the dry ingredients. Mix everything together, ensuring that all the oats and seeds are coated in the wet mixture.

Transfer the granola mixture to a baking dish, spreading it out evenly.

Place the dish in your preheated oven and bake for about 20 minutes, or until the granola is golden brown.

After removing the granola from the oven, let it cool completely.

Once cooled, store your homemade granola in an airtight jar.
