PRODUCT INFORMATION

Ingredients

BASE
1 1/2 cups organic cashews
1/2 cup organic shredded coconut
8 organic dates, pitted
3 tbsp organic maple syrup


CARAMEL
3/4 cup organic dates, pitted
1/2 cup organic peanut butter
6 tbsp organic almond milk
3 tbsp organic maple syrup

TOPPINGS
1/4 cup organic almonds
100g organic dark chocolate (vegan)

method

BASE

  1. In a high-powered blender* or food processor, pulse cashews into small pieces.
  2. Add in coconut, dates, and maple syrup and blend until a sticky dough forms.
  3. Press into a square tin lined with baking paper and put in the freezer until you have made the caramel.

CARAMEL

  1. Blend all ingredients, adding almond milk a little bit at a time until a smooth caramel forms. 
  2. Spread caramel over the base.
  3. Scatter almond on top of the caramel and press down lightly.

TOPPING

  1. Melt your chocolate in the microwave, stirring every 15 seconds until completely melted.
  2. Drizzle chocolate over the top of the bars.
  3. Place back in the freezer until set
  4. Once set, cut into bars and enjoy!

NOTES:

* I used an OmniBlend with a tamper stick. If you use a blender you will need to use your tamper stick to help move things around as it gets quite thick.

Store in an airtight container in the fridge or freezer.
