Thick & Creamy Sweet Potato Soup

This nutritious creamy sweet potato soup is perfect for cool nights.
Method
- In a large pot, heat olive oil and sauté onions until translucent.
- Add carrots and sweet potatoes and cook for 3-5 minutes.
- Add vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
- Remove from heat and let cool slightly.
- Use an immersion blender and puree until smooth.
- Whisk in Xanthan Gum until thick and creamy.
- Serve and enjoy.
