This nutritious creamy sweet potato soup is perfect for cool nights.

INGREDIENTS 

DESCRIPTION

  1. In a large pot, heat olive oil and sauté onions until translucent.
  2. Add carrots and sweet potatoes and cook for 3-5 minutes.
  3. Add vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  4. Remove from heat and let cool slightly.
  5. Use an immersion blender and puree until smooth.
  6. Whisk in Xanthan Gum until thick and creamy.
  7. Serve and enjoy.
