Basil Pesto Edamame Spaghetti

Eco Organics Edamame Spaghetti are a great source of calcium, magnesium & iron. Organic, vegan, GF & low carbs, this spaghetti are perfectly paired with a fresh pesto sauce for an easy and delicious mid-week meal!
Method
- Place all pesto ingredients into a high speed blender or food processor and blend until combined.

Cook the spaghetti as per packet instructions.

Drain the spaghetti, reserving 1/4 cup of the pasta liquid.

Toss the pasta through the pesto sauce and add a little of pasta water at a time to help combine.

Optional: Add some extra fresh basil leave, grated parmesan and fresh lemon when serving for extra fresh flavour!
