Chocolate & Raspberry Chia Pudding

A great breakfast dish or delicious snack, packed with protein and fibre that will keep you feeling fuller for longer. Chia seeds are plant based protein which pack a big nutrient punch and are high in antioxidants. Make it the night before and place in the fridge to set overnight. If you are short on time, you can take with you and eat on the go.
Method
- Place the coconut cream, raspberries, maple syrup/honey and vanilla extract in a blender or food processor and blitz on high until the mixture is smooth.
- Add the chia seeds and stir through to combine.
- Pour the mixture into four serving cups or jars and put in the fridge to set overnight.
