Coconut & Chocolate Macaroons

Tip: The mixture will be very sticky. When rolling the macaroons, make sure to press the mixture together first so it stays together, then you can start rolling.
Method
- Pre-heat the oven to 180C.
- In a bowl, combine the coconut condensed milk, desiccated coconut, vanilla extract and a good pinch of salt. Make sure to mix well – the mixture will be quite sticky.
- Add the chocolate chips and mix again, making sure it is well combined.
- Using a tablespoon, scoop a tablespoon size of the mixture. Using clean hands, press the mixture together then roll in your hands to form your desired shape.
- Place the macaroons on a lined baking tray and bake for 12-15 min, or until lightly golden.
- In the meantime, prepare your chocolate drizzle. Melt together the dark chocolate and coconut oil and set aside.
- Once the macaroons are cooked, let cool slightly. Then, dip the bottom of each macaroon in your chocolate drizzle. You can use any remaining melted chocolate to drizzle on top.
- Let cool fully before digging in! Enjoy!
