Chocolate-dipped dates filled with pecans and peanut butter make a tasty snack. This recipe is simple and easy to follow, resulting in a sweet treat. Melt the chocolate. Transfer the chocolate to a heat-safe bowl. Place the bowl over a small pot with a bit of simmering water (double-boiler). Melt the chocolate, stirring frequently.
While the chocolate is melting, cut the date in the middle and remove the pit.
Stuff each pitted date with pecan and fill it with ½ teaspoon - 1 teaspoon of peanut butter depending on the size of the date.
Once the chocolate is melted, carefully remove the bowl from the pot. Place the bowl onto a kitchen towel.
Line a cooling rack or sheet tray with parchment or wax paper. Using a fork or candy utensil, dip each date into the chocolate to coat. If there is chocolate remaining, drizzle each date with chocolate.Place in the fridge for 15 minutes to allow to harden and enjoy!
