This cake is incredibly quick and easy to make - made even easier by using Honest to Goodness already mixed Organic Dried Fruit which includes figs and cranberries.
Soak fruit in juice and brandy along with orange zest and linseeds for at least 2 hours, or overnight
When ready to assemble, heat oven to 150 degrees and line 2 x 6 inch (15cm) cake tins or 1 x 8 inch (20cm) cake tin with greaseproof paper
Sift the flour with cinnamon, nutmeg and ground ginger
Stir flour mix through soaked fruit
Spoon into prepared cake tin(s) and smooth top
Decorate with nuts if using
Bake for 30-35 minutes for 6 inch cakes or 45-50 minutes for 8 inch cake
While still warm, brush with apricot jam
